We usually do a version of Chiang Rai Kao Soi called 'Nam Ngiew'...it's a spicy porky red broth with tomato over thin rice noodles. It's definitely not widely available around these parts.
People sometimes see it and say, "this isn't the Kao Soi I usually have. Where's the coconut milk? Where's the chicken?"
